The Origins of Smokehauz
In 2012 a group of friends started an annual summer BBQ. Nothing unusual there right? Well these friends were all foodies and well versed in cooking and grilling techniques; this BBQ quickly developed into a foodie competition as to who could make the most delicious food dishes with the constant battle to top one another for delicious food supremacy.
At one of these summer BBQs, Smokhauz founder Scott Cahill placed some cheddar cheese onto a cedar plank and put directly into a kettle smoker. The Result? a smokey, gooey, melted slab of cheese that while ultimately delicious- didnt hold its form and once cooled was hard to store. The idea firmly in place, he set out to recreate the smokey cheese flavor without the high heat; this allowed a longer smoking time which resulted in a deep, flavorful infusion of smokey goodness into the cheese not found in other smoked cheeses. Other smoked cheeses used smoke seasoning for flavoring or due to heat constraints a very mild, barely noticeable smoke. This was unacceptable for those of us with only the highest standards for gourmet cheese.
